With the end of November near, we’re in the midst of holiday season for many people around the world.
There are plenty of celebrations, whether it’s a North American Thanksgiving with cooling temperatures and falling leaves, an Australian Christmas as summer is in full swing, or the New Year (according to the Gregorian calendar at least).
It always brings back fond memories.
With them come traditions, both new and old. A customary event, object, or feeling that makes the celebration familiar and comforting. It may even be the thing that makes that time of year what it is. For me, it’s Thanksgiving only if there’s a dish my family calls “Mexican lasagna.”
Growing up we didn’t really have traditions for non-Indian holidays. But once I was old enough to be trusted with the stove, I found this recipe online and tweaked it a bit (it wasn’t spicy enough for either my mom or me!). It’s made of layers of tortilla, beans, vegetables, and spices, topped with a golden layer of cheese, and guacamole and salsa piled high. Add some tortilla chips and it’s an incredibly filling dish, much like traditional comfort food. And something that everyone enjoys.
